Potato-Salmon Casserole with Fennel and Peas

The family needed something to eat for lunch today and I decided to make a simple but yummy summery casserole. Although, who says it can’t be wintery. 🙂 Turned out OK, so I decided to post it. Feeds about 4 really hungry people or 6 a bit less hungry ones.


1kg potatoes

400g salmon fillet

1 fennel bulb

1dl fresh dill

5dl fresh or frozen peas (sweet peas would also be scumtious here)

6dl 10% cream (can also be fattier, but that might make the dish a bit heavy in my opinion)



Peel and slice the potatoes, thinly slice the fennel, chop the dill.

Dice the salmon. I cut it into small cubes.

Mix the potatoes, salmon, fennel, peas and dill in the baking dish (mine was 30cm x 20cm), also adding the salt and pepper to taste.

Pour over the cream (I actually used a bit more than 6dl, it depends on the amount of stuff you have), so that everything is almost covered.

Bake in the oven at 175°C for around 1 hour until the potatoes are soft.

Now there’s nothing left to do but enjoy with some fresh salad or anything you like.
